Margaret and for anybody else, here is the recipe I used:

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Yield: 6 - Slices
Tomato Pie Recipe:

Fresh tomatoes in a pie crust somehow just doesn't sound right does it? Well, if you've never tried Tomato Pie, you are in for one more delicious treat. You can use a store bought crust for convenience. Like me, I'm sure you'll be wondering where this awesome dish has been all of your life. Try it.

Ingredients:

2 - 3 fresh RomaTomatoes, sliced or cubed.
8 fresh Basil leaves, finely chopped.
1/2 cup Spring Onion, or other onion, chopped.
1 Pre-Baked Pie Crust, 9 inch.
1 cup of grated Cheddar Cheese.
1 cup of grated Mozzarella Cheese.
1/2 cup of Mayonnaise.
Salt and Pepper to taste.
Instructions

Slice and chop the Basil, set aside.
Slice and chop the Onion, set aside.
Slice and cube the Tomatoes, place in colander to drain.
Sprinkle the Tomatoes with Black Pepper.
Sprinkle on the Salt, stir and let continue to drain.
(Very little drained with the Roma Tomatoes.
I also dabbed the slices with a paper towel.)
In a separate mixing bowl, add the Cheddar Cheese.
Add the grated Mozzarella Cheese.
Add the Mayonnaise, stir until combined, set aside.
To assemble the Pie, place chopped onions in bottom of crust.
Sprinkle with the chopped Basil.
Add the drained sliced Tomatoes, spread around evenly on crust.
Top with the Cheese mixture, spread almost to edges of pie crust.
Bake at 350º for about 30 minutes or until lightly browned.
Remove from oven and allow to cool on a wire rack.
Serve warm and Enjoy!
Notes
To re-heat place individual slices on a serving dish and microwave each slice about 30 seconds or just until warm. .

Cracking open the champers! 5 years since my op and I got my clearance from Breast Clinic today...WOO BLUDDY HOO, my head fell onto the table and I shook all over, poor Ed thought I'd had bad news, love the man...More good news, our Golden Wedding on Sat 24th and my Ma said it wouldn't last marrying a man from Garston, WRONG MA....We are going to stay over in the beautiful Swan Valley, brewery, winery, honey farm, choc factory, cheese factory. Our accommodation looks wonderful compared to our honeymoon hotel in London, it made Fawlty Towers look like the RITZ... 2 single beds one a foot higher than the other. Ed went to see the Maitre De who had his dinner spilt all down his jacket and when Ed asked for a room with one big bed, he said "No speak English"...............I took the top bunk!! wink wink Tina xox

Thank you to all my mates for your wonderful posts and best wishes. Yes our hotel was brilliant.... :D We had a great time in the beautiful Swan Valley, did very well, 2 breweries, 2 choc factories, 1 honey farm and Ed's fave the cheese factory. Loads of bus tours here and there. 2 Hen's Nights, 1 Bucks Night (the groom wore fishnet tights :shock: ) 30th and 21st birthday, Ed and I happy to people watch especially when they'd all had a few drinky poos, so funny but good natured. Oh and the fashions and the shoes, girls, this was red carpet stuff. Our Asian tourists were everywhere and did they spend up big, especially the Honey Farm, produce and the skin care range. It's 20 years since we've been then when we took my bro Thommo....into a winery where the young lady serving samples was buxom to say the least....I said to her "my brother likes a wine that is full bodied and well rounded"..........he nearly fell off the stool. Your bonzer posts are very much appreciated, thanks again!! Tina & Ed :D

Janine and I went to the annual Newport News Fall Festival Sunday,
it was held on both Saturday & Sunday and literally, thousands attend it
from all over Virginia as it is very popular.
The weather was just right in the Seventies and sunny, we
toured around looking at everything and I was particularly
impressed with the handmade quilts, there was even one with
a Halloween theme although they were quite pricey, none
below $400.00 dollars. Made us really appreciate the ones that
Lew's Mom made for us all. :D

After a lovely outdoor lunch of BBQ, Fries and homemade Lemonade from the Lions Club we
were tired and ready to go home for a nap, or at least I was!!! :D

After torrential rain and winds with the electricity going out,
we finally seem to be back on track, thankful that we did
not get hit as hard as Florida, South Carolina & North Carolina.
The weather is now really cool in the Sixties so i decided to
bake my first "wintery" meal this year, Shepherds Pie!!
Lew enjoyed same with a serving of pickled sliced beets! :D ................

We went to the Renaissance Fair yesterday. Lots of people in costume. It was hot, people selling sunshades did a great business. I bought one which helped a little.

Really great photo of you Jean. Glad you had such a lovely day's outing.

My poor Lilac Tree that I've had for over 20 years doesn't know whether
it's coming or going. The weather has been extremely mild and it is
now blossoming like Spring is here!!!

Patricia, your Lilac tree is beautiful. Dad had one at the bottom of the garden, loved the perfume smell of it.
